Arugula and Chicken





Have you ever tasted Arugula? Sailor planted some seed in August and now it is a foot high. I saw it next to the peppers I was harvesting and asked him what it was. So I cut some off and used it in my salad.
I am hooked. It has a nutty flavor, if that is possible. I added pinion nuts, sunflower seeds, onions, tomatoes, mandarin orange slices and an orange sauce from Panda Express for dressing.

Then I made a Basil Chicken curry with Coconut sauce to go with it. I felt like we had gone to an expensive restaurant to eat. It was so good. I would add a sweetener to that sauce and I added some more coconut to make it taste more like Coconut. Plus I would not use more than a half if that of the jalapeno pepper if that. But it was so delicious.

It was so delicious and memorable I had to write a post on my about it.
